Why Go

Cole Bay's Wellington Road does not scream destination dining, but Lagoonies Bistro & Bar has turned its lagoon-front position into one of St. Maarten's most reliable lunch-to-dinner spots. The formula sounds simple — American-Caribbean-international menu, full bar, waterfront seating — but the execution, the view, and the consistently generous portions have built a reputation that extends well beyond the Cole Bay neighborhood.

The Experience

The lagoon setting is the first thing that grabs you. Yachts and sailboats bob at anchor or glide past on their way to the drawbridge, and the outdoor seating puts you close enough to the water to hear the rigging clink. Inside, the atmosphere is casual bistro — come as you are, order what sounds good, and settle in for a meal that is in no rush to end. The menu covers a wide spread: burgers and sandwiches for a quick lunch, fresh seafood and steaks for a proper dinner, pasta for the comfort-food crowd, and daily specials that let the kitchen show off. The full bar backs it all with cocktails, an international wine list, and cold beers that go down easy in the Caribbean heat. Service gets consistent praise for being friendly without being hovering, and portions are the kind that make you reconsider ordering an appetizer and an entree. Opening at 11 AM through 10 PM (11 PM Fri-Sat) means Lagoonies covers the full dining spectrum from late lunch to after-dinner drinks.

What to Try

The fresh seafood options rotate based on availability — ask your server what came in today. The daily specials board is where the kitchen experiments, and it often yields the most interesting dishes. For a complete experience, start with a shared appetizer platter, then move to a main course with a lagoon view.

Insider Tip

Wellington Road is not the most intuitive route for first-time visitors. GPS will get you there, but look for the lagoon-side parking area rather than trying to park on the main road. Sunset timing (around 6–6:30 PM depending on season) is the prime hour for the best lagoon light. Friday and Saturday nights can get busy — reservations are smart during high season.
