The kitchen leans hard into what Nevis does best — fresh Caribbean seafood, island-grown produce and gentle nods to Nevisian cooking traditions — and the bar puts real thought into wines by the glass and rum-forward cocktails. What to Try
Start with whatever local catch the kitchen is featuring that day — snapper, mahi and lobster all rotate through depending on what the Nevisian fishermen brought in. Ask about the daily ceviche or crudo if it's on, and don't skip a side of local root vegetables or plantain. Rum cocktails built around Caribbean rums (a proper ti' punch or a beach-side rum sour) are a smarter choice than a generic mojito, and the wine list has enough depth to genuinely pair with the seafood-heavy menu.

Book a table roughly 45 minutes before sunset — you'll get golden-hour light on the water, a cooler breeze, and the best photos, all before the dinner service really kicks in. If you're not staying at Four Seasons, still call ahead: On The Dune is open to outside guests but tables on the sand-side rail go fast, especially in high season (Dec–Apr). Mention any special occasion when you reserve; the staff are quietly excellent at making anniversaries and proposals land.

Location: Four Seasons Resort Nevis, Pinney's Beach, Charlestown side of the island (roughly a 10-minute drive from Charlestown, or a short water-taxi hop from St. Kitts).
